We embrace simplicity relying on the exceptional quality of our products.
Inspired by our land and islands, we create recipes that truly capture the essence of the Greek culinary heritage. We carefully choose all our ingredients to become the perfect companions for our fish and seafood. Simple ingredients of high quality, which nowadays are hard to find, like hand-picked sea salt from natural salt pits, unique larder delicacies like cured roe and vinegar and of course the mythical extra virgin olive oil.
We consider extra virgin olive oil as the strongest ally for fish and seafood in the Mediterranean cuisine. At kima, we carefully choose our yearly harvest by tasting samples from premium producers. Choosing extra virgin olive oil has become a ritual that always unveils new realms of learning and exciting findings. This year we use two kinds, both of low acidity, unripe from 100% ‘manaki’ variety and a mix of the varieties 70% ‘manaki’ and 30% ‘koroneiki’.
FIN TO GILL
By adopting the “use-all, waste-not” philosophy, we create dishes utilizing the entire fish from head to tail.
Fish bones turn into delicate broths, while the fillets are separated from the body to be enjoyed in raw preparations showcasing the high quality and freshness of the product.
The head is lightly grilled to ensure that the succulent cheeks, maybe the most delectable morsel of the fish, are cooked to perfection. Part of the tail that holds a generous piece of the juicy flesh is smoked, grilled and presented like a fish ‘shank’.

Our cocktails showcase Greek spirits, such as the unique flavour of mastiha, the intense aromas of ouzo and the complexity of Metaxa liqueur.
